Try these delicious recipes and wow your family and friends!
This classic combination of celery, blue cheese, apples, and pecans team up with Brussels Sprouts and chicken to create a nice balance of flavors and a perfect salad.
8-9 fresh Brussels sprouts, quartered through the stem and stem removed
2 Tablespoons Champagne wine vinegar
1 Tablespoon Mayonnaise
1/3 cup olive oil
1 large Granny Smith apple, quartered, cored, cut into 1/2 inch cubes
3/4 cup chopped fresh celery
1/2 cup crumbled blue cheese
1/2 cup pecan pieces
3 cups mixed salad greens
1-1/4 pounds boneless, skinned chicken breast
3/4 cup OKB Old Kentucky Barbeque Sauce - any variety
Preheat oven to 350.
Lightly season chicken with salt and pepper
Bake for 60 to 90 minutes, depending on the thickness of chicken
Steam Brussels sprouts until tender, about 12-15 minutes
Transfer to a large bowl and cool
Mix vinegar and mayonnaise in a small bowl
Gradually whisk in oil and season with salt and pepper to taste
Add apples, celery, and mixed salad greens to Brussels sprouts
Add dressing and toss to combine
Place salad green mixture on plates
Warm but do not boil barbeque sauce
Remove chicken from oven and slice into one-inch long pieces, and lightly toss the chicken in the barbeque sauce
Layer chicken over salad greens. Top with blue cheese and pecans
Makes two entrée salads or four small dinner salads.
Mixed nuts are a tasty appetizer and crowd-pleaser for family and holiday gatherings.
Also makes a wonderful hostess gift.
1/4 cup OKB - Old Kentucky Barbeque Sauce
3 Tablespoons light brown sugar
1/2 Teaspoon kosher salt
1 pound of your favorite mixed nuts such as walnuts, pecan, almonds
1 1/2 tablespoons olive oil
1/2 cup plain M&Ms (optional)
Preheat over to 350
In a medium saucepan over low heat, add barbeque sauce, brown sugar, and salt
Simmer gently until the sugar is melted, about two minutes
Remove from heat and add nuts and oil, stirring until nuts are evenly coated
Spread nuts evenly on a baking sheet and bake 12 to 15 minutes until nuts are a deep brown color
Remove from oven and cool completely in a single layer on wax paper
Stir in M&Ms (optional)
Tip:
Replace the M&Ms with 1/2 cup dried cranberries to create an amazing and unexpected taste and a beautiful holiday accent to any meal.
